You mentioned not liking pumpkin except in pie...You really should give the risotto a try (unless you simply don't like cooked pumpkin). Since pumpkin is a squash, yes, zucchini would work, but the texture will not be the same. Butternut would be a good substitute. Just about anything can be used in risotto though. :-)
